Chow-Chow

CHOW-CHOW
(when handling hot peppers wear gloves)

1 quart chopped cabbage
1 quart chopped green tomatoes
2 tabasco peppers, seeded, chopped
2 jalapeno peppers, seeded, chopped
2 habenero peppers, seeded, chopped
2 sweet red peppers, chopped
2 sweet green peppers, chopped
2 large onions, chopped
¼ cup salt
1½ cups vinegar, 5% acidity
1½ cups water
2 cups firmly packed brown sugar
1 teaspoon each dry mustard, turmeric, celery seed

Mix chopped vegetables with salt and let stand overnight. Next morning, line a colander with cheesecloth, pour vegetable mixture into colander, let drain, then bring edges of cheesecloth up over mixture and squeeze until all liquid possible is removed. Boil vinegar, water, sugar, and spices five minutes. Add vegetable mixture. Bring to a boil. Pour into sterilized jars to within a half inch of top. Put on cap. Process in boiling water bath five minutes.

Yield: six pints.

T-Shirt Dress

I made a couple of these little dresses out of an inexpensive t-shirt and fabric scraps. They are easy and care-free for summer fun.

Fabric Letters

This is the computer fabric I had on hand.  I used my ink jet printer.  These are dry clean only.  There are many other brands of computer fabric. 



I opened the saved letters with Microsoft Office Picture and printed the 9 wallet size on a 8 x 10 page.
These are my initials printed on fabric.  I will either sew them into a project such as quilt or purse or I will put fusible on back and iron on to a project.

Zucchini Bread

3 cups grated zucchini
3 cups sugar
2 tsp baking powder
1 tsp baking soda
1 1/2 tsp cinnamon
3 cups flour
1 cup cooking oil
1/2 tsp salt
4 eggs 1 cup chopped pecans or walnuts (optional)

Preheat over 300 degrees for bread pans or 350 degrees for 13 x 9 cake pan. 

Mix all ingredients and pour in 2 bread pans or one 13 x 9 cake pan sprayed with cooking spray
cook bread pans for 1 hour 15 mins or cake pan approximately 45-60 mins   check with toothpick till it comes out clean

optional icing

3 oz cream cheese
1 stick butter
1 tsp vanilla
2 cups powder sugar
beat till creamy, spread on cool cake, sprinkle with nuts if desired





Ketchup

Homemade Ketchup


Yield: 2 cups
Prep Time: 5 minutes
Cook Time: 0 {but refrigerate over night please}
Total Time: 5 minutes

Ingredients:

12 ounces Tomato Paste
1/2 cup Dark Brown Sugar
1/2 teaspoon Dry Ground Mustard
1/2 teaspoon Kosher Salt
1/2 scant teaspoon Cinnamon
2 pinches of Ground Clove
2 pinches of Allspice
1 pinch of Cayenne Pepper
2/3 cup Water
4 tablespoons White Wine Vinegar

Directions:

Combine all ingredients in a large mixing bowl.
Stir until the sugar is completely dissolved.
Store in an airtight container overnight for the flavors to develop.
Use where ever ketchup is called for and enjoy!

I made this ketchup with the following changes. I substituted 4 tbls apple cider vinegar and 2 tbls apple juice for the white wine vinegar and added 1/2 tsp onion powder. I increased salt to 1 tsp.  I microwaved one batch for 2 minutes on high to help dissolve sugar.  This recipe adapted from www.simplyscratch.com
