Squash Relish


I canned for the first time in two years today.  I was looking forward to making something from my garden.  I picked a really easy recipe to make.  If you decide to use this recipe I assume you know the safe food handling rules for the water bath canning method.  If you have not canned before please research the safe method for water bath canning.  If this procedure is not done properly you could poison yourself and anyone else that eats the fruit of your labor.  My grandmother taught me to can among many other useful things.  I am so grateful now that she had the patience to teach me.




8 cups chopped yellow squash
2 cups chopped onions
1 cup chopped red or green bell pepper
jalapenos 1-3 seeded and chopped---optional
I chop all this in my food processor
add
2 cups apple cider vinegar
2 cups sugar
1 tsp celery seed
1 tsp mustard seed
1 tsp salt

bring all ingredients to a boil
ladle into hot sterilized jars
and water bath 10 mins   makes 5-6 pints
This is a great relish for salads, hot dogs, red beans and burgers.
