Zucchini Bread

3 cups grated zucchini

3 cups sugar

2 tsp baking powder

1 tsp baking soda

1 1/2 tsp cinnamon

3 cups flour

1 cup cooking oil

1/2 tsp salt

4 eggs 1 cup chopped pecans or walnuts (optional)

Preheat over 300 degrees for bread pans or 350 degrees for 13 x 9 cake pan. 

Mix all ingredients and pour in 2 bread pans or one 13 x 9 cake pan sprayed with cooking spray

cook bread pans for 1 hour 15 mins or cake pan approximately 45-60 mins   check with toothpick till it comes out clean

optional icing

3 oz cream cheese

1 stick butter

1 tsp vanilla

2 cups powder sugar

beat till creamy, spread on cool cake, sprinkle with nuts if desired
